Preparation

1. Slice the chicken breast through the middle to reduce the thickness and speed the cooking time.
2. Chop the herbs well and combine with the breadcrumbs.
3. Place the whisked eggs, herbed crumbs and flour into separate bowls.
4. First coat the sliced chicken breast into the flour then the eggs and finally the breadcrumbs and press well so the chicken is coated well. Shallow or deep fry until golden.
5. Combine the lemon rind with the HELLMANNS Real Mayonnaise.
6. Slice the brie.
7. Construct the sandwich in the following order – Sliced tiger bread, lemon mayonnaise, tomato, rocket, cooked chicken schnitzel, brie and top with remaining bread.
