Tricks of the Trade from our Chef

Fish will keep cooking even after remove it from the heat, so it is best to slightly undercook your fish so when it reaches the table it should be perfect!

For perfect cooked pasta - strain and allow to cool on a large tray. Allow for the pasta to "steam off", this will stop the paste from cookong further, drizzle over a little olive oil to orevent pasta sticking together.

Hint - Don't cool cooked pasta under running cold water as this will cook it, and you will end up with overcooked pasta.

Wear a full apron, this will keep your white chefs jacket and pants clean and can be easily removed if you need to step out into the restaurant. If customers see a clean chef they are likely to be happier customers!
