Over-portioned meals usually go to waste. Portion control is not only good to reduce waste, it will also increase your Cafes’ profit margins. Optimal portions are what you should aim for. A quick tip is to have clear-cut recipe cards within easy reach of all your kitchen staff and reminders, whenever deemed necessary, to look them up. Let your staff know that controlled or optimum portions not only help with waste control, but also help manage the pantry and therefore costs better.
