
Is authentic Thai cuisine all about spice or no spice? Wendy Khouphongsy, Head Chef of The Tall Lemongrass restaurant was asked if Aussies can handle the heat and spice of Thai cuisine. After opening her restaurant, she was a bit apprehensive about using traditional Thai spices as she felt that it would be too hot to handle! After receiving feedback, all her customers preferred the spicier route. She started experimenting and using ingredients that highlighted her style of cooking. The best compliment she received was that her food was better than Thailand.
