Here’s how you conduct the Waste Audit

Set up your kitchen
- Download the 'Waste management' toolkit
- Download and read the Waste Audit 101 document
- Train your staff
- Set up signage and designate bins

Conduct your waste audit
- Track waste for 3 days
- Tally the results
- Weigh prep, spoilage and ‘avoidable’ plate waste after each service
- Update the Food Waste Data tracking sheet

Implement waste reduction actions
- Download and read our ‘Top Waste Saving Tips’ document
- Implement the actions that will have the most effect in your kitchen
