Birria is a traditional barbacoa-style cooking method from Western Mexico that combines succulent stewed meat with an acidic dip. Here, these elements enjoy the addition of cheese and a smoky beef mayo that add silkiness and salt. Preparation

  1. What you need

    • Select the number of serves you require for this recipe, and the quantity of ingredients will be automatically adjusted accordingly.
  2. Birria dip sauce

    • In a mixing bowl, combine Hellmann’s Real Mayonnaise, braised beef brisket liquid, Knorr American Chipotle BBQ Sauce, smoky paprika and Knorr Thai Lime Powder. Mix until smooth and well combined.
  3. To serve

    • Spread a thin layer of bean paste over the tortillas. Top with braised beef brisket, cheddar, corn, jalapeños, tomatoes and red onion. Fold and grill on both sides until golden and the cheese has melted.
    • Serve hot with birria dip sauce and fresh lime wedges.
