Corn Fritters with Smoked Salmon, Ricotta and Citrus Hollandaise
Corn fritters are a classic on any breakfast or brunch menu. Add KNORR Hollandaise Sauce not just on the side but also into the fritters mixture for extra flavour.

Baby rocket 300.0 g

Smoked salmon, slices 600.0 g

Chives 20.0 g

Ricotta 300.0 g

Pomegranate pearls 100.0 g
Preparation

Fritters
- Sift flour into a large bowl with baking powder. Whisk in combined eggs, milk and KNORR Hollandaise Sauce. Stir in corn and season.
- Shallow fry fritters in batches until golden and cooked through. Drain and keep warm.

Citrus Hollandaise
- While the fritters are cooking, combine KNORR Intense Flavours Citrus Fresh with extra KNORR Hollandaise Sauce.

To Serve
- Arrange baby rocket on serving plates. Top with corn fritters, smoked salmon slices, snipped chives, crumbled ricotta, and pomegranate pearls. Serve with citrus hollandaise and lime wedges.
