Healthy, vegetarian and full of texture, this burger is inspired by the nourishing staples of Middle Eastern and Greek cuisines. The patty is fried until crispy, then topped with a juicy portobello mushroom. These elements are paired with a creamy and bright citrus dressing and crunchy pickled vegetables that bring a tangy acidity to balance the flavours, creating a wholesome and satisfying meal.

Preparation

  1. What you need

    • Select the number of serves you require for this recipe, and the quantity of ingredients will be automatically adjusted accordingly.
  2. Citrus dressing

    • In a mixing bowl, combine yoghurt, Hellmann’s Real Mayonnaise, dill, parsley, Knorr Thai Lime Powder, garlic, salt and sumac. Whisk until smooth and well incorporated, then set aside.
  3. To assemble

    • Toast brioche buns until lightly golden.
    • Spread citrus dressing evenly on both cut sides. Layer with half of the chillies, carrots, red onion and turnip.
    • Place the falafel patty and a portobello mushroom on top, then add the remaining vegetables.
    • Close with the top bun and garnish with micro herbs.

    • If falafel burger patties are not available, substitute with your preferred plant-based alternative (for example, veggie patties, chickpea patties or lentil-based options) for a similar texture and flavour profile.
