A bold, plant-forward bowl packed with deep koji-driven umami, balanced by natural sweetness from roasted sweet potato and fresh, vibrant greens, delivering rich flavour with a nourishing edge. Taking inspiration from poke bowls and using Japanese methods of preparation, this dish is a mix of textures from chewy grains through to a syrupy honey, silky tofu and crunchy pickled vegetables.

Preparation

  1. What you need

    • Select the number of serves you require for this recipe, and the quantity of ingredients will be automatically adjusted accordingly.
  2. Miso umami dressing

    • Combine Hellmann’s Real Mayonnaise with miso, soy sauce, honey and five spice powder. Mix until smooth and fully emulsified.
  3. To assemble

    • In mixing bowl, combine the kale, black rice, barley, sweet potato, tofu and daikon. Add the miso umami dressing and gently toss until everything is well coated. Reserve some of the dressing to serve on the side.
    • Transfer to a serving plate, then finish with goji berries and a garnish of micro herbs. Serve remaining miso umami dressing on the side.
