Crunchy Polenta

  • KNORR Concentrated Liquid Stock, Chicken 30.0 ml
  • Polenta instant 170.0 g
  • Olive oil 75.0 ml

Citrus Dressing

To Serve

  • Lebanese Cucumber 2.0 pc
  • Mixed lettuce 400.0 g
  • Smoked salmon 850.0 g
  • Avocado, sliced 2.0 pc
  • Orange, cut into segments 2.0 x
  1. Crunchy Polenta

    • Lightly oil and line the base of an 20 cm square baking tray with baking paper.
    • Pour 500 ml of water and KNORR Concentrated Liquid Stock, Chicken into large pan and bring to boil. Reduce heat to low, add polenta and cook stirring constantly until polenta thickens. Remove from heat and pour into baking tray. Cover and refrigerate overnight.
    • Turn polenta onto flat surface and cut into 2 cm thick slices.
    • Heat oil in a large pan over medium heat. Cook polenta in batches, turning carefully until crisp and golden. Remove and drain.
  2. Citrus Dressing

    • Mix KNORR Intense Flavours Citrus Fresh with HELLMANN’S Real Mayonnaise and buttermilk until combined.
  3. To Serve

    • Arrange cucumber, lettuce, smoked salmon, avocado, orange segments and polenta fingers on plates and drizzle with citrus dressing.
