What you need

A refreshing and light salad that suits all palates, the zesty citrus flavours in this recipe is the perfect balance to smoked salmon. You can also substitute smoked salmon with tuna, or even chicken.



  1. What you need

    • Select the number of serves you require for this recipe, and the quantity of ingredients will be automatically adjusted accordingly.
  2. Polenta

    • Lightly oil and line the base of a 20 cm square tray with baking paper.
    • Combine 500 ml of water and KNORR Concentrated Liquid Stock in a large pan. Bring to a boil.
    • Reduce heat to low, then add the polenta. Stir constantly to cook until polenta thickens.
    • Remove from heat and pour the polenta into the baking tray. Cover and refrigerate overnight.
    • Turn polenta out onto a flat surface. Cut into 2 cm thick slices.
    • Heat olive oil in a large pan over medium heat. Fry polenta slices in batches, until golden and crisp. Drain and set aside.
  3. Citrus Dressing

    • Combine KNORR Thai Lime Powder, HELLMANN'S Real Mayonnaise and buttermilk. Set aside.
  4. To Assemble and Serve

    • Arrange cucumber ribbons, lettuce leaves, avocado slices, orange segments, smoked salmon and fried polenta on a serving dish.
    • Drizzle with citrus dressing before serving.
