    • Heat oil in a large pan over medium heat. Add onion, carrot and pumpkin and cook for 10 minutes then add garlic, red capsicum, zucchini and spices, toss to coat. Cook until tender.
    • Combine KNORR Vegetable Booster with 2 cups boiling water. Stir to dissolve then add to stew with Pronto Napoli and chickpeas. Simmer 10 minutes. Season.
    • Mix together yoghurt and paprika.
    • Serve stew with yoghurt and parsley along with cous cous.
