Preparation

  1. What you need

    Select the number of serves you require for this recipe, and the quantity of ingredients will be automatically adjusted accordingly.
  2. Yunnan-inspired dressing

    • In a mixing bowl, combine Knorr Italiana Pronto Napoli, garlic, chillies, black pepper, tamarind, Knorr Thai Lime Powder, salt, Knorr Chicken Booster, honey and soy sauce. Whisk until smooth and emulsified, then fold through chopped coriander.
  3. Assembly

    • To assemble, combine rice noodles, pea sprouts, bean sprouts, cherry tomatoes, mushrooms, prawns, shredded chicken, fish, pork and mint in a large bowl. Add the dressing and gently toss until evenly coated.
  4. To serve

    • Plate the dressed salad, place a poached egg on top, and finish with crispy prosciutto and micro herbs.
  5. Chef tip

    • The dressing should be bright, tangy, and slightly spicy with rounded sweetness. Adjust lime or honey to fine tune.
