Preparation

  1. What you need

    • Select the number of serves you require for this recipe, and the quantity of ingredients will be automatically adjusted accordingly.
  2. Salmon

    • Remove the skin from salmon and set aside. Cut salmon into 2 cm dice.
    • Toss diced salmon with ground cumin. Allow to sit for 15 minutes.
    • Fry diced salmon in a large pan until cooked through and slightly charred.
    • Deep fry the salmon skin until crisp. Drain. Break into shards to make salmon crackling.
  3. Chipotle Mayo

    • Combine HELLMANN'S American Chipotle BBQ Sauce with HELLMANN'S Real Mayonnaise.
  4. To Assemble & Serve

    • Warm through the corn tortillas.
    • Spread the tortillas with chipotle mayo, then top with baby leaves and salmon.
    • Drizzle with extra chipotle mayo. Serve with pickled vegetables, coriander sprigs, lime wedges, and salmon crackling on the side.
  5. Chef's Tips

    • Made from yellow or white corn, corn tortillas are also called 'street tortillas' as they are traditionally found in the street markets in Mexico. Substitute in flour tortillas if corn tortillas are not available.
