Oysters with Twin Toppings: Lime Chili Jam and Smoky Granitas
These granitas create course icy flakes packed full of flavour which will give oyster lovers a fresh alternative to a dressing or Kilpatrick offering.

Lime, Chili Jam Granita
- Mix KNORR Lime Powder, KNORR Thai Sweet Chilli Jam and 100 ml water. Stir until combine. Place in the freezer in a shallow dish and freeze for six hours or until firm.
- Heat 200 ml water in a pan. Add KNORR Tomato Powder and whisk until combined. Stir in KNORR Intense Flavours Deep Smoke and simmer for 5 minutes then remove from heat and cool. Place in the freezer in a shallow dish and freeze for six hours or until firm.
- Place oysters on a serving platter. Sit on a bed of rock salt, if possible, to balance.
- Remove both granitas mixture from freezer and scrape frozen surface with a fork. Spoon over oysters and serve immediately garnished with micro herbs if desired.
