Preparation

Method
- Whisk together eggs, flour and baking powder. Add zucchini, ricotta, spring onions and dill. Season to taste and set aside.
- Cook bacon until golden, drain on paper towel.
- Cook fritters in batches to make 20 fritters.
- Combine Hellmann’s Real Mayonnaise and Knorr World Cuisine American Chipotle BBQ Sauce.
- To assemble, spread chipotle mayo over the bread. Top with spinach leaves, fritters, bacon and tomato.
