Let Spain reign on your menu with this crunchy fritter and smashed avo number. Serve it as a main or make it bite-size with sauces on the side for a perfect snack on your delivery menu.

Preparation

  1. What you need

    • Select the number of serves you require for this recipe, and the quantity of ingredients will be automatically adjusted accordingly.
  2. Batter

    • Sieve flour into one bowl. Make a well in the centre of the flour.
    • Crack eggs into a separate bowl and whisk in the milk, salt, and pepper.
    • Pour the liquid mix into the flour bowl, folding to combine.
    • Fold in the corn, chives, chorizo, and feta. Set aside, ready to cook.
  3. Fritter

    • Heat a frying pan over medium flame. Lightly oil the pan.
    • Spoon the batter into the hot pan. Cook until both sides are browned.
  4. Smashed Avo

    • Scrape out avocado flesh and sprinkle with KNORR Thai Lime Powder.
    • Mash avocado using a fork, until desired texture.
  5. Sauce

    • In a pot, slowly heat up KNORR Hollandaise Sauce and stir occasionally.
  6. To Serve

    • Serve fritters on a bed of smashed avo and with hollandaise drizzled over. Add KNORR American Tomato Chilli Relish and dukkah as condiments.
