The Institute of Hospitality in HealthCare (IHHC) had recently hosted a webinar on Business Continuity Plans for Foodservice in Aged Care & Healthcare during COVID-19, which we attended.
The key takeaway from this webinar is the importance of kitchens having crisis management plans in place; so they are better prepared to deal with any potential staff shortages, supply problems, and residents’ isolation requirements. This is so Chefs are ready to implement these plans, should any of the above issues occur.
One of the recommendations discussed is the need for Chefs to work with dieticians to have a reduced menu or an alternative simpler menu that is ready to implement if and when the need arises.
